    The Alfriston, East Sussex

    Virginia Woolf once remarked that the South Downs are “too much for one pair of eyes,” and I couldn’t agree more. The expansive landscapes here provide a perfect remedy for the winter blues, especially when you can stroll along the rolling chalk hills, invigorated by the brisk sea breeze. At the end of such a walk, the prospect of a cozy hotel bar with a flickering fire is a delightful bonus.

    Recently reopened under new ownership, The Alfriston has transformed a historic red-brick manor house—parts of which date back to the 14th century—into a charming retreat. Its design takes inspiration from the Arts and Crafts movement, featuring beautiful block-printed wallpapers and warm wood paneling.

    This hotel boasts a range of amenities:

    • A picturesque front lawn ideal for games of croquet and pétanque.
    • A luxurious 10-metre outdoor pool, heated and open year-round.
    • A spa area with a sauna and steam room, perfect for relaxation after your swim.

    Dining at the 1554 Brasserie was a highlight, with a vibrant atmosphere filled with both guests and locals. The menu caters to diverse tastes, featuring dishes like:

    • Slow-roasted Norfolk cauliflower (£18 for a main)
    • Haunch of fallow deer with chestnuts and cacao sauce (£28)

    I personally enjoyed scallops followed by grilled whole sea bass with samphire, both of which were exceptional. Waking up to misty views of the downs and enjoying breakfast in the hand-painted Orangery felt like a scene from a Woolf novel. I can only imagine she would approve of this splendid setting.

    Upon arriving at Wildhive Callow Hall, just outside Ashbourne, I was struck by its modern design—more reminiscent of the chic Cotswolds than traditional Derbyshire. The hotel features a striking glass-box restaurant attached to a grand Victorian mansion, with interiors that burst with color and pattern, thanks to designer Isabella Worsley.

    This establishment also offers a wealth of amenities:

    • A small spa with botanical facials and reflexology.
    • A yoga studio, gym, and sauna.
    • Complimentary bikes for exploring the beautiful surroundings.

    My son and I enjoyed a scenic ride along the flat 13-mile Tissington Trail, followed by a delicious seafood misto platter in the lively restaurant with its curved bar and artificial olive trees.

    The Cliff Hotel & Spa, Cardigan Bay

    For those looking to refresh after the holiday season, The Cliff Hotel & Spa offers a breezy coastal escape overlooking the stunning Cardigan Bay.
